Ingredients

simple, fresh, uncomplicated

Adress all the senses, smell, taste and feel the experience of fresh ingredients – such as the khakis, pomegranates, kiwis, avocados, walnuts, tangerines, quinces, oranges or lemons, that naturally thrive to spectacular taste on Ibiza. The very definition of fresh, with an utterly seductive scent! Alcohol, ready-made products, industrial sugars and sweeteners are completely spared, caffeine and dairy products are limited to a minimum to aid in the process of cleansing and revitalisation. Balanced proteins, complex carbohydrates, healthy fats and a great deal of fresh taste form the basis of our delicious cuisine.

We combine vegan dishes with meat and fish. The famous recipes of the Mediterranean cuisine certainly serve something for every guest and taste. And if not: We are happy to consider and process any special nutritional request.

Breakfast:

Homemade, roasted granola with sheep’s milk yoghurt, served with fresh fruits, alternatively fried eggs with salmon and fresh seed bread

Snack:

Lime cucumber smoothie with fresh mint

Lunch:

Gratinated sweet potato and zucchini and garnished with our own fermented cashew nut cheese, served with vegetables on lentils / quinoa salad.Next: nutritional advice and coaching

Snack:

Energy balls made of dates, coconut milk, almonds and cashew nuts

Dinner:

Pumpkin cream soup with crunchy seeds, chicken wrap stuffed with various vegetables, beans and a cottage cheese cream, homemade cocoa cream on raspberry bed for dessert

Tea infusion:

Wonderfully calming blend of camomile and verveine

Breakfast:

Homemade fresh pancakes made of gluten-free oatmeal and grated apple, with cocoa cream or agave syrup, fresh fruits, sliced sheep’s cheese with nuts, cereals and various yogurts and juices

Snack:

Apple banana smoothie with almond milk

Lunch:

Quinoa mushroom risotto, with glazed carrots in a wok, with grilled zucchini slices with parsley root – beetroot puree. Green salads garnished with dry tomatoes, fresh or steamed cherry tomatoes and black olives with sunflower seeds and almond slivers

Snack:

Cocoa brownies from sweet potatoes

Dinner:

Miso soup with vegetables and algae beef wok (or seitan) with black rice noodles, broccoli, cauliflower, bean sprouts, onions and garlic rosé coconut cake with cinnamon-nut-cocoa-banana ground

Tea infusion:

Wonderfully soothing tea blend of lemongrass and mint

There are no secrets in the kitchens of TOP HILL Retreat. Offering guests the opportunity to cook their favourite dishes from the menu and continue the newly acquired lifestyle at home. Once a week the kitchen team therefore invites guests to join the kitchen.

So the tasteful “Wish you were here” motto of TOP HILL Retreat may linger long after your stay.
